feat(release): self-host updates track a verified 'stable' branch

install.sh + klonkt-update now default to the 'stable' branch instead of 'main', so a
self-host auto-update never pulls work-in-progress. 'stable' only advances to a verified
commit (via the klonkt-release step on release). --branch main opts into the dev branch.

• scripts/install.sh — default KLONKT_BRANCH=stable
• README.md — document the stable update channel
