docs(changelog): rewrite — accurate, user-facing, no contradictions

• CHANGELOG.md — the [Unreleased] section described features later removed (Google login, favourites) and hub bits, plus file paths/code symbols. Rewritten to a clean, plain-language, user-facing summary of what Klonkt actually is now; dropped the stale federation-proto note. [1.0.0-beta.2] kept as released history, de-jargoned.
• CHANGELOG.nl.md / CHANGELOG.de.md — re-translated from the clean English base.
